Key responsibilities
• Develop and plan innovative menus that are in line with client and customer expectations on site for all events and outlets
• Lead, develop and mentor a large kitchen team
• Ensure that budgetary targets are achieved on site through a thorough understanding of GP, GP%, selling price, cost price, margin, mark up and calculation of menu costs through recipes.
• Work with Head Chef where necessary to plan menus and prepare food in order to minimise wastage
• To fully understand and interpret the Company of Cooks brand in terms of food and food service
• To oversee the preparation of all food, ensuring it meets the highest standards as expected by the customer, the RHS and other stakeholders.
• To ensure food is seasonal, of known provenance and where possible sourced locally.
• To seek customer feedback during service and use the information to develop the food and food service offering
Our Ideal Candidate:
- Someone with a desire and passion to cook with fresh quality ingredients sources from local producers
- We are looking for someone who is willing to always push culinary boundaries
- A leader who will train, nurture, and develop future talent within the business
- Has significant exposure to a variety of different commercial kitchens
- Extensive experience within the contract catering industry is preferred but not essential
- Up to date knowledge of local food trends and culinary techniques
- Able to demonstrate the highest level of food quality
- Experience of leading large teams in all ready of BOH
